Static IP on my Pi

I wanted to be able to use VNC to view the Pi’s desktop over Ethernet on one of my laptops. Works wonderfully, except if i take this set up out of its home, which i will be doing in a month or so, i do not want that IP address to change, otherwise i will not be able to access the Pi’s desktop to troubleshoot issues on site.

This Pi will be the heart of an interactive art installation… using Mote strips hooked up to a web service to control the colors.

I need i guess advanced Newbie level instructions for assigning a static IP to my Pi, and what to be aware of when transporting the setup from its home to its art installation. Its a Pi 3 running Noobs build of Debian.
