I love the pibow coupe but with the possibility of wanting a diffuser in the future for the unicorn hat is it best to buy a standard pibow then a coupe top?

Possibly, at least I believe you can swap a layer for the Coupe top (layer 5 I believe) if that’s what you had in mind, although I’m not entirely sure how useful it would be.
You could also get a set of Extended screws (PIM019) and make a platform for the diffuser as illustrated below, leaving rapid access to the GPIO:
