Can this work successfully with a mouse, keyboard and still enasble me to plug a wifi or Bluetooth dongle into it.

Both of those solutions tap into the USB bus of the zero via pogo-pins - they may have a slight current consumption of their own, but otherwise the current limit will be 1200mA AFAIK, plenty enough for relatively low-power peripherals such as those you listed.
