I have done a few things with pis but am new to pimoroni parts. I was wondering if there is a case someone has for a pi plus a hyperpixel 4 (not square.) The application wants a nice display but needs almost no compute power.

I was thinking of saving a few pence and using a pi 3. Would people do that or go with the pi 4 instead?
Is there a board that I can plug between the pi and the display to access signals like spi interfaces?

On printables.com you will find many cases for pi(3/4)+hyperpixel. Just enter “hyperpixel” in the search field. Some of the cases are really nice. Of course you need either a 3D-printer or you have someone that can print for you. There are also commercial offerings for that.
If you don’t need the compute power, go with the pi3. It also produces less heat. But be aware it takes a bit longer to boot. I still have and use a few pi3 and they work since years and I see no reason to replace them.
The display uses almost all pins. Putting a board in between is possible (if it is slim enough), but does not make much sense (except if you want to trace signals with your logic-analyzer).
