Anyone can recommend a case for mounting the Pirate line out kit in the car? Wouldn’t mind being able to see the screen, but can’t quite work out what case would suit. Any recommendation?

Thats a dilemma thats been around since the first Hat was released.
You could likely mount the Pi in a Pibow, then plug the Pirate Audio on top.
If you get one of the long bolt packs you may be able to use those to mount the Pibow to something.
